1. Heat a medium saucepan over medium high heat. Add 1 tablespoon extra-virgin olive oil, 1 turn of the pan. Add onions and season with salt and pepper or steak seasoning blend. Cook onions, stirring occasionally, 10 minutes or until onions are soft and caramel in color.
2. Heat a heavy griddle pan over medium high to high heat. Wipe griddle with a drizzle of oil using a paper towel. Sear and cook thin sliced steaks until brown but not crisp, about 2 minutes on each side. Cook steaks in single layers in 2 batches and tenderize by cutting into meat with the side of your spatula while they cook. When the steaks are browned, just before you remove them from heat, sprinkle them with garlic salt and pepper. When all of the steaks are cooked, line each of your split rolls with 2 slices of provolone cheese. Pile 1/4 of your meat and onions on to the griddle and mix together with your spatula. Pile the meat and onions into rolls on top of the cheese. The heat from the meat and onions will melt the cheese. Repeat for remaining servings and serve.

1. Warm the split rolls in a 250°F oven until ready.
2. Heat the oil in a wide-bottomed skillet over medium heat, preferably cast iron.
3. Add the onions and 1/4 teaspoon kosher salt and cook, stirring frequently, until translucent and lightly browned, about 10 to 12 minutes.
4. While the onion is cooking, slice the ribeye into extremely thin strips and pieces. Use ground beef as your inspiration, but stop before the beef reaches quite this size, and before cutting the beef to this smallness makes you insane. TIP: Cheesesteak shops cook cheesesteak beef on a flattop grill, and can chop the beef as it cooks. But you are cutting the beef this thinly now because it will be difficult to chop the beef once it is in a standard pan with sides.PRO TIP: A fantastic way to thinly slice beef is to slice it frozen. You will have much more control. You can add the frozen beef to the pan.

1. Trim away and discard the long piece of fat running down the side of the steaks. Cut each steak in half and put on a baking tray, then transfer to the freezer and freeze for 40 mins.
2. Heat the oil in a heavy-based pan or casserole dish set over a medium heat. Add the onion and peppers along with a good pinch of salt and fry for 20 mins, or until the onions are golden and sticky. Add the vinegar and cook for a further 5 mins. Season to taste.
3. Using a sharp knife, slice the steak as thinly as possible and pile the slices into four portions. Heat a skillet over a high heat until almost smoking. Put one portion of the steak slices in the pan in a pile that's roughly the length of your rolls. Fry for 3 mins over a high heat until some of the steak is cooked through, with pink bits remaining. Pile a quarter of the onion mixture on top, as well as a quarter each of the cheese slices and the mozzarella. Continue to cook undisturbed over a medium heat for 5-10 mins until the meat is brown and crisp around the edge and the cheeses have melted. Split one of the rolls open and carefully scoop the meat and cheese mixture into it. Repeat with the remaining meat, onions, cheese and rolls.

The best place to get a cheesesteak in Philly, according to Frommer's, is Cosmi's Deli (cosmideli.com) in South Philly, a few blocks from Pat's and Geno's. Unlike those two more-famous places, Cosmi's has a closing time, 9 p.m., so no late-night munchies here. In 2004, "Philadelphia" magazine sent one of its writers to 50 cheesesteak shops.

What makes a great Philly cheesesteak?

What was on the original Philly Cheese Steak?

Philly Cheesesteak. This sandwich originated in 1930 at a hot dog stand in South Philadelphia. It originally contained only sliced steak and onions, with cheese added around 20 years later (you now have a choice of provolone, American, or Cheez Whiz). 1 1/2 lb.

What goes with Philly cheese steak sandwiches?

A really good side would be a nice refreshing vinegar coleslaw. The philly cheese steak is rich and decadent, and to help off set the huge amount of protein and calories in it, the fibre and the nutrients from a raw slaw salad would be really good to off set that.
