Directions In an 8-quart stock pot, bring Old Bay, salt, water and beer to a boil. Add potatoes and onions; cook over high heat for 8 minutes. Add smoked sausage; continue to cook on high for 5 minutes. Add corn to pot; continue to boil for 7 minutes. Add shrimp in shells, cook for 4 minutes.
In a small bowl, combine flour, salt, pepper and cayenne pepper. In a large skillet, saute dredged shrimp in olive oil for 5 minutes over high heat. In the same pan, saute the garlic, shallot, parsley and oregano over medium heat for 3 minutes; stirring constantly. Pour the wine and brandy into the skillet and ignite with a match or lighter.
Whisk celery salt, paprika, black pepper, cayenne pepper, mustard, nutmeg, cinnamon, cardamom, allspice, cloves, and ginger together in a bowl. Store in an airtight container. An intense and rich Ethiopian spice is even better when made at home.
