The recipe for the sacred Michigan belongs to the family of the original Clare and Carl, passed down through the generations. Rumor has it that the spices are mixed at home and brought to the restaurant in a sealed plastic bag. Rumor also has it that Clare and Carl’s sued McSweeney’s for a stolen recipe and won. This is, of course, biased
If you’re driving around this area, keep an eye out at gas stations, roadside dairy bars and concession stands — odds are they’ll have michigans. In the Plattsburgh area, there are four standout purveyors of this meat-covered hot dog: Clare & Carl’s Texas Red Hots, McSweeney’s, Ronnie’s Michigan Stand and a relative newcomer, Michigans Plus.
According to Serious Eats, the sauce recipe may have originated in Michigan, but "bears little resemblance to Detroit Coney sauce, with no offal and barely any Greek flavor, although the texture is similar to Flint sauce ." The sauces are varied; some can be tomato-based and may contain vinegar, brown sugar, and a blend of spices.
Jack “Nitzi” Rabin (also known as Irving J. Rabinowitz) was hired as a carhop by Mrs. Otis, and eventually, she sold him the business AND her secret recipe. Nitzi knocked down the Otis’ original little hot dog stand and established what eventually became the present-day Nitzi’s / McSweeney’s in 1935.
The McSweeney's Red Hots Michigan has a mild meat sauce and the onions are sprinkled on top, rather than the more traditional "buried" style found throughout the city. Conveniently, the dish is served with a fork to pick up the fallen sauce and onions, as McSweeney's puts a generous helping of toppings on their hot dogs.
