1. Preheat the oven to 375 degrees F (190 degrees C). Grease 9x13-inch baking dish.
2. Heat a large pot of water over medium-high heat and bring to a boil. Drop potatoes and 1 teaspoon of salt into the water. Boil until the potatoes are very tender, about 20 minutes. Drain potatoes, reserving 2 cups of the cooking water (potato stock).
3. Mash potatoes in a bowl with milk and 3 tablespoons butter. If potatoes are too dry, add some of the potato stock gradually until mashed potatoes are light and fluffy. Season with salt and pepper and set aside.
4. Place 2 skillets on the stove. Add 1/4 cup potato stock, 1 tablespoon butter, and 1/2 of the garlic to each skillet and heat over medium heat until butter is melted. Place 1/2 of the mushrooms in each skillet and cook, stirring occasionally, until mushrooms are soft, about 10 minutes, adding more potato stock if mushrooms become too dry. Remove from the heat and transfer mushrooms and any cooking liquid to the prepared baking dish.

1. Heat oven to 425 degrees. Bring 2 cups of water to boil in a small pot. Place the porcini mushrooms in a medium bowl and pour the boiling water on top; set aside to soak and soften.
2. Meanwhile, in a large (12-inch) ovenproof skillet, heat 2 tablespoons oil over medium-high. Working in two batches so the mushrooms brown evenly, add half the oyster mushrooms, season with salt and pepper and cook, undisturbed, until browned underneath, about 3 minutes. Stir the mushrooms, then continue to cook until browned all over, about 3 minutes. Transfer to a medium bowl. Repeat with 2 tablespoons oil and the remaining oyster mushrooms; transfer them to the medium bowl. Add another 2 tablespoons oil, then add the cremini mushrooms, season with salt and pepper and cook, stirring occasionally, until browned and tender, 6 to 8 minutes, lowering the heat as needed to avoid burning. Transfer to the bowl.
3. Reduce the heat to medium and add the butter to the skillet. Once the butter is melted, add the onion and cook until starting to soften, about 5 minutes. Add the kale, garlic, thyme and rosemary, season with salt and pepper and cook, stirring occasionally, until softened, about 3 minutes, adding 1 to 2 tablespoons oil if the pan seems dry. Sprinkle with the flour and cook, stirring, until flour is dispersed and lightly toasted, 2 minutes.
4. Stirring constantly, gradually add the stock, cream and 3/4 cup of the liquid from the soaking porcini mushrooms. Cook over medium heat, stirring occasionally, until thickened, about 5 minutes. Remove from heat, then stir in the carrots, parsnips, potatoes, and the sautéed mushrooms and any accumulated juices. Strain the soaked porcini mushrooms, discarding any remaining liquid, then roughly chop the mushrooms and stir them into the filling. Season to taste with salt and pepper. (If making ahead, the filling can be refrigerated a day in advance; just warm it up slightly before assembling and baking.)

1. Heat the oil in a large frying pan, and add the onion and garlic. Cook over a medium heat for a few minutes, then add the diced mushrooms. There are a lot of mushrooms, so you can add them in stages if your pan isn't big enough!
2. Crumble the stock cube over the mushrooms, and cook for around 10 minutes, until they are thoroughly cooked. Add the smoked paprika and plenty of black pepper (you shouldn't need any salt unless you used low sodium stock), then stir in the sour cream, grated cheese and chopped parsley. When the cheese has melted, remove from the heat, and allow to cool. Transfer to a suitable baking dish - a larger dish will give a shallower pie with more pastry, and a smaller dish will give a deeper pie with less pastry (I used a fairly small dish).
3. Cut a piece of puff pastry just larger than the baking dish (an inch or two extra around all four sides), and place it over the mushroom filling. Cut a large cross in the top of the pie, and crimp the edges tightly with a fork. Cut off any excess pastry, making sure it is tightly sealed around the edge of the dish. Brush the pastry lightly with milk.
4. Bake the pie at 190°C (Gas Mark 5 / 375°F) for around 25 minutes, or until the pastry is cooked to your liking. Be aware that if the filling bubbles out through the hole, it will brown more quickly than the pastry will, so watch for burning. Serve warm.
