1. In the bowl of a food processor fitted with the blade attachment, pulse the mushrooms until they appear coarsely ground. (This can also be done by hand.) Set aside.
2. Place a large heavy-bottomed pan over medium-high heat and add the oil. Add the garlic, carrots, celery and onions with a large pinch of salt and cook, stirring occasionally, until the vegetables soften and begin to caramelize, about 5 minutes.
3. Add the mushrooms and thyme and cook until the mushrooms begin to brown and dry out, about 5 minutes. Stir in the tomato paste and toast it until it looks rusty, a few minutes. Add the milk, season with salt and pepper and bring to a simmer. Cook, partially covered, until the sauce has thickened and all the liquid is reduced, at least 20 minutes.
4. Before serving, stir in some basil and freshly grated Parmesan. To serve, grate more Parmesan over top.

2. In a large pot, heat 2 tablespoons of the olive oil until shimmering. Add the venison, season with salt and pepper and cook over moderately high heat, stirring occasionally, until browned, 5 to 7 minutes. Transfer the venison to a colander set over a bowl and let drain.
3. Heat the remaining 2 tablespoons of olive oil in the pot. Add the onion and garlic and cook over moderate heat, stirring occasionally, until softened, 7 to 8 minutes. Stir in the carrots and celery and season with salt and pepper. Cook for 5 minutes, then add the wine. Simmer until reduced by half, about 3 minutes. Add the tomatoes, bay leaf, oregano and the drained venison and bring to a simmer. Cover and cook over moderately low heat, stirring occasionally and breaking up the tomatoes, until the venison is very tender and the sauce has thickened, about 1 1/2 hours. Discard the bay leaf and oregano sprigs.
4. Bring a large pot of salted water to a boil. Add the pasta and cook until al dente. Drain, reserving 2 cups of the cooking water. Add the pasta and 1 cup of the cooking water to the Bolognese sauce and simmer over moderate heat, tossing, until the pasta is nicely coated. Add more pasta cooking water if the sauce seems too thick. Remove the pot from the heat and stir in the cheese and butter. Season with salt and serve immediately.

1. In a large Dutch oven or heavy pot, heat olive oil over medium heat. Add the onion garlic and a three-finger pinch of salt and sweat them until they are translucent, about 2 minutes. Add the neck bones and brown them, about 5 minutes. Add the ground veal, beef and sausage, season with another healthy pinch of salt, and continue cooking until the meat is browned, about 10 minutes. Add the white wine, tomatoes and their juice and the bay leaves, scraping the bottom of the pot with a wooden spoon, making sure to get all of the browned bits into the sauce. Season the sauce with salt and simmer for 2 hours over medium heat. Remove the bay leaves and neck bones and let cool. Skim any fat that rises to the surface.
2. Bring a large pot of water to a boil. Add enough salt so that it tastes seasoned and allow the water to return to a boil. Add the noodles and cook until al dente. Drain well and set aside.
3. Meanwhile, in a medium bowl mix together the ricotta, parsley, basil, oregano, and eggs with a pinch of salt.
4. Preheat the oven to 350°F.
