2. Stir the salt and water together until dissolved.
3. Pour the salt water over the vegetables until it reaches just below the top of the jar. There should be about 1/2 inch of room left.
4. Fold a small cabbage leaf and press it down on top of the vegetables so that it keeps the vegetables submerged in the salt water. This isn't necessary, but helps make sure the vegetables are submerged. Feel free to skip this step if you don't have cabbage on hand.

1. Start with a clean surface including hands and all equipment you are using.
2. Remove the outer leaves of the cabbage. DO NOT WASH THE CABBAGE. The beneficial bacteria is in the cabbage, don't wash it all away. I prefer to use organic cabbage as to avoid pesticide exposure.
3. Slice the cabbage by first slicing in half, then in quarters. Remove the core and slice the cabbage lengthwise into thin ribbons
4. Place the cabbage into a large bowl and sprinkle with salt. Using clean hands, massage the salt into the cabbage. Continue to massage and squeeze the cabbage for several minutes. This requires putting a little muscle into it. Gradually the cabbage will become watery and limp. This should take 5-10 minutes.

1. Remove the outer leaves of your cabbage, slice it in half and remove the core. Shred your cabbage by either using the slicing blade of a food processor or by using a sharp knife. Transfer the shredded cabbage to a large mixing bowl.
2. Add the salt to the shredded cabbage and use clean hands to massage the cabbage until the salt has dissolved and the cabbage has begun to wilt – massage for at least 5 minutes.
3. At this point it is helpful to allow the cabbage to rest for 20 to 30 minutes – the salt will continue to draw the liquid out of the cabbage and you will find a lot of liquid at the bottom of the bowl.
4. While the cabbage is resting wash your mason jar and lid well, and jelly jar – no need to sanitize but it should be freshly washed. Cut a piece of parchment paper to fit just inside your mason jar, set aside.

1. Make the brine: simply mix the salt and water together in a separate bowl. Make sure the water is filtered.
2. Add the mustard seeds, dill, coriander, cumin, bay leaves, and chili flakes to a Mason jar. Add in minced garlic or crushed garlic clovers. Adjust spices according to your taste preferences.
3. Cut the tough woody ends off of the base of the asparagus spears. Place the asparagus into the Mason jars and pack them tightly. Add in the sliced and seeded jalapeno (optional). Cover the mixture with the brine from step 1, making sure that all of the asparagus is covered in the brine.
4. Loosely cover the Mason jar (you don’t want it air tight as this will impair fermentation). Place in a dark area, such as in a cabinet shelf, for about 1 to 2 weeks until it is fermented. Keep at room temperature or around 70 degrees so that it ferments properly. Make sure to check on your mixture daily to assure that the spears are under the brine. You can place a glass weight on top of the spears to keep them in the brine.

1. Remove a few of the outer leaves from your cabbage and set aside. Using your knife, cut the cabbage in half, and then begin slicing the cabbage into finely shredded pieces. Throw out the stem or save for your compost pile. For a finer shred you can use a mandolin or your food processor with a shredding blade if you prefer.
2. Place shredded cabbage inside a large mixing bowl. Add the 2.5 teaspoons of salt and 1/4 cup of lemon juice and begin massaging the cabbage with your hands for a few minutes to distribute the salt and lemon juice evenly. Let cabbage sit for 20 to 25 minutes* so that the salt/lemon can begin breaking down the walls of the cabbage. It will slowly begin releasing its water.
3. – using your hands (or some other tool to pound the cabbage) begin squeezing the cabbage. Some people prefer to pound the cabbage using a rolling pin or another hard object (but be careful not to break the mixing bowl!). I used my hands and it worked out fine. Grab the shredded cabbage and just squeeze it hard and continue doing so for about 10 to 15 minutes.
4. Go ahead and add the minced garlic and caraway seeds at time time and mix evenly.
