1. I re-created this recipe based on the memory of smell (oui, Rémy!) of the aroma in my late grandmother's house as she roasted curry powder. My grandmother roasted curry powder in a wok 1-yard in diameter, over a charcoal stove, and had all of us - her grandkids - tightly packed the spice mix into recycled glass ketchup bottles which she then sells. Unfortunately, none of us documented her recipe so I created this concoction based on what I remembered from those hot afternoons in Malaysia 30+ years ago! And dedicate it to the memory of my grandmother. Malaysian curry powder reflects the blend of South Indian, Sri Lankan and Peranakan flavors.
2. I always make sure I must have 1 or 2 tubs or bottles of homemade chili paste in my fridge. This is because I prefer homemade than those commercial chili boh. It is so convenient if you have an ever ready homemade chili paste in your fridge. You can serve it with noodles, as a dipping sauce, cooking, etc. Moreover, it is so easy to prepare!
3. This is a tea-break snack that is commonly made in most Malaysian homes especially when it is raining outside! In Malay it is called "Ikan Bilis Jemput-jemput or some call it as cekodok etc.. It is made out of plain flour and it does not taste the same as the onion fritters that I previously shared in this site.. So do have a try if you can get the small dried anchovies or you can substitute to shrimps.
