1. Melt the butter in a large saucepan over medium heat. Add half of the heavy cream (2 cups (473 mL)) and powdered sweetener. Bring to a boil, then reduce to a simmer. Simmer for 30-45 minutes, stirring occasionally, until the mixture is thick, coats the back of a spoon and volume is reduced by half. It will also pull away from the pan as you tilt it. (This will go faster if you use a larger pan.)
2. Transfer the mixture to your ice cream maker and churn according to manufacturer's instructions, or until the ice cream is the consistency of soft serve. (My ice cream maker took 15 minutes, so less than the average manufacturer time.) Do not over-churn, or it will turn into a butter-like consistency.
3. Transfer the mixture to a freezer container (like a 9x5 in (23x13 cm) loaf pan) and smooth the top with a spatula. (If you want to add mix-ins, gently stir them in at this step, and also sprinkle some on top.) Line the surface with a piece of parchment or wax paper to keep ice crystals from forming. (You can use an ice cream maker if you have one.)

1. Before you start mixing the ingredients, put the ice cream churn canister and paddle in the freezer. Your ice cream will churn much faster if the equipment is cold when you start.
2. Combine heavy cream, sweetener, egg yolks, vanilla and MCT oil (or liquor, if using - see Recipe Notes) in a blender and mix well. I used a stick blender but a traditional blender works just fine, too.
3. Pour the mix into the cold canister.
4. Churn the ice cream according to the manufacturer’s instructions. If you’re using the same model as me, here’s what I did! Place the canister in the churning bucket and attach the lid to the paddle and canister. Make sure everything is lined up correctly, then place the motor on top, turning the latches on the sides to lock it in place. Fill the bucket halfway with ice - I just used ice cubes from my freezer’s ice maker. Top with a layer of ice cream salt. Fill to the top of the canister with ice and another layer of salt. Plug the ice cream churn in and let it go to work!

1. Bring the almond milk and the cream to a simmer in a heavy medium saucepan. Remove from heat. Whisk egg yolks in a large heat proof bowl. Add the sweetener and whisk until blended.
2. Gradually whisk the hot cream mixture into the egg yolks. Be sure to add it slowly and whisk vigorously to keep the egg yolks from cooking. Return the mixture to the saucepan. Cook mixture over low heat, stirring frequently, until it reaches a temperature of 165- 170º Fahrenheit. Whisk in the glycerin and vanilla extract.
3. Cool mixture completely, stirring occasionally. I like to place the pan in a large mixing bowl of ice to cool the mixture quickly. Alternatively, you can allow it to cool at room temperature for 20 minutes, then refrigerate until chilled.
4. Pour cold mixture into an ice-cream freezer and freeze according to manufacturer's instructions. When ice-cream reaches the desired consistency, transfer to a freezer-safe container with a lid.

2. Add all ingredients to a medium-sized saucepan and whisk well. Note: be sure you open and scrape the vanilla bean into the mixture prior to adding the full bean...this way you get a great deal of vanilla flavor out of it.

Remove from heat and allow mixture to cool before transferring it to a sealable container. Refrigerate at least 2 hours, or until completely chilled.
4. Stir the ice cream base well and pour it into your ice cream maker. Turn ice cream maker on and churn until very thick and creamy. Serve immediately for soft serve consistency or for an ice cream consistency, transfer to a sealable container and freeze for at least 2 hours. Note: if you don't own an ice cream maker, simply transfer the base to a freezer-safe container and freeze 4 hours or until completely frozen.

1. See recipe video for guidance!
2. Slice open the vanilla bean and scrape the seeds with a sharp knife.
3. Add coconut milk, sweetener, vanilla bean with scraped seeds (if using), and salt to a saucepan over medium heat. Whisk until all the solids from the coconut milk have the dissolved and the mixture is smooth. If using a vanilla bean, simmer for 15 minutes to infuse the milk.
4. Remove the vanilla bean and sprinkle xanthan gum little by little and blend until fully combined. If paleo and using arrowroot, dissolve it first in a tablespoon of cold water (i.e. make a slurry). You will likely have some air bubbles, but be sure to check there are no lumps. Any lumps will be resolved by mixing with an immersion blender (or in an actual blender). Sieve the mixture to a bowl, cover with a layer of cling film (saran wrap) laid directly over the vanilla mixture, and allow the mixture to cool completely. The texture will be thick and jelly-like (don't worry, your ice cream won't have this texture!).

2. For both methods, in a large mixing bowl use a whisk attachment to mix together all of the ingredients on low. Mix this for a few minutes to make sure that all of the ingredients are well blended together. Using a blender will also work for this step.
3. If you are not using an ice cream maker you can transfer the mixture to the frozen bowl and freeze. Every 30 minutes for the next 2 -2 1/2 hours take the mixture out of the freezer and beat for a couple of minutes. Then return the ice cream to the freezer. Continue this process until your ice cream has that desired consistency
4. If you are using an ice cream maker follow the instructions provided with your ice cream maker. You can freeze this ice cream for up to eight hours (covered) before transferring it to the ice cream maker as well.

1. Chill Pan: Prepare durable dish with 1.5 quart capacity, safe for freezer and hand mixer use — I use glass 9x5 inch loaf pan. Place pan in freezer to chill for about 10 minutes.
2. Combine Ingredients: Whisk all ingredients in large bowl until sweetener is completely dissolved. Pour mixture into chilled pan, and freeze uncovered for about 45 minutes or until edges of mixture begin to set.
3. Beat & Freeze (Note 3): Scrape down sides and use electric hand mixer directly in pan to beat for about 30 seconds on low or until smooth. Return pan to freezer. Repeat this process every 30 minutes to scrape down frozen bits and beat mixture until smooth, freezing in between, for about 3 hours or until mixture is no longer liquid. As mixture freezes, it will become firmer each time you beat it. After beating for last time, use rubber spatula to flatten surface of ice cream, cover, and store in freezer until frozen.
4. Serve (Note 4): Prior to serving, take ice cream out of freezer to thaw a bit before enjoying.
