1. Dissolve sugar in 1 cup (240ml) warm water. Stir in yeast and let it stand for about 10 minutes. The mixture should become foamy, which indicates the yeast is alive. If the mixture doesn’t foam, that means you have bad yeast, or used too hot or too cold water.
2. To make the dough in stand mixer, combine flour and salt in a mixing bowl with dough hook attachment. Add yeast mixture and mix on low speed for 5 minutes. The dough should be soft and not very sticky. (Depending on humidity, you may need to add a little bit more flour, but not much though.) Kneed the dough until it’s nice and smooth. Rest for 5 minutes, then run the mixer on low again for another 3 minutes.
3. To make the dough by hand, combine flour and salt in a large bowl. Add yeast mixture and knead until dough comes together into a ball. (Depending on humidity, you may need to add a little bit more flour, but not much though.) Transfer the dough onto lightly floured kneading surface. Knead until form a nice smooth ball. Let it rest for 5 minutes, and then knead again for about 10 minutes.
4. Coat a bowl with a little bit of oil. (I use olive oil.)

1. In a large mixing bowl, add 1/2 cup of the warm water and sprinkle the yeast on top. Let set for about 5 minutes or until yeast has dissolved. Add in the sugar, salt, melted butter and remaining water and stir until blended. Lastly, add in the flour until mixture is relatively smooth. The dough will look very shaggy at first and you may want to knead by hand to bring everything together which should only take about a minute or so. Once the dough is mostly smooth (still okay to have some shaggy bits as you do not want to overwork it), place the dough ball back into the bowl and cover with a dish towel. Let rise in a warm, draft-free place for about 1 hour or until doubled in size.
2. Punch down the dough and turn it onto a floured work surface. Using a bench scraper or sharp knife, cut dough in half. Cover and let rest for about 10 minutes.
3. Roll each dough portion one at a time into an approximate 10x8 inch rectangle shape. Roll the dough up jelly-roll style (almost like you're making cinnamon rolls) starting with the long side closest to you, pinching the seam to seal. Place the loaves on a parchment lined baking sheet, seam side down. Cover and let proof/rise until almost doubled in size, about 45 minutes.
4. Preheat oven to 400 degrees F. With a sharp serrated knife, make three or four diagonal cuts in the top of the loaf. Bake for 20-30 minutes or until lightly browned. Cool on wire racks until warm to the touch or room temperature. Store any leftovers in an airtight container at room temperature. Can also be frozen for up to 1 month; thaw before serving.

1. This recipe works best with day-old or slightly stale challah bread. If your bread is fresh, you can take some of the moisture out by placing the slices on a baking sheet and putting them in a preheated 350 degree oven for 10 minutes, flipping the slices once halfway through cooking. This will dry the bread out a bit, which will help it soak up the moisture from the milk and egg mixture. If you don't have time for this step, no worries-- fresh bread will work too, it just won't soak up as much of the egg mixture.
2. In a blender, combine the milk, eggs, flour, banana, brown sugar, vanilla, cinnamon, salt, and optional rum or liqueur. Blend for a few seconds until well mixed.
3. Pour the liquid mixture into a shallow baking dish or pie plate.
4. Soak your slices of challah in the liquid for about 60 seconds, turning once, until the bread is nicely saturated on both sides. This should be done in batches.

Frequently Asked Questions

How to make fluffy French bread?

This recipe for Fluffy French Bread is my go-to bread recipe. It makes one loaf and is easily doubled to make for a crowd. In bowl of stand mixer (or large bowl if mixing by hand), combine warm water, yeast, and sugar. Let sit 5-7 minutes or until foamy.

How do you make light and airy bread?

Light and airy bread with a crisp crust. Great to serve with soups, pastas, dips or to make french bread pizza! In large mixing bowl with a dough hook, thoroughly mix ¾ cup flour, sugar, and yeast. Add butter. Gradually add warm water to dry ingredients and beat 2 minutes with mixer at medium speed, scraping bowl as needed.

How can I make my bread lighter and fluffier?

If you want a lighter fluffier bread loaf just add 2 Tbsp of dry milk to the flour per loaf of your bread. Vinegar has a very similar effect to the dough as the ascorbic acid.

How do you make bread dough soft and fluffy?

Rising time is key for soft, fluffy bread. Double in size is the rule of thumb for most bread recipes. Stiffer dough for a taller loaf. If the dough is too sticky and wet, it spreads flat as it rises. Roll the dough into a loaf shape using a “ sleeping bag ” rolling method.
