I love torrone, the pillowy soft nougat candy filled with nuts. Traditional torrone, as the Italians intended it, has almonds, but I prefer the flavor and color of pistachio. Torrone is made with a mild honey, which imparts great flavor on its own, but I like to add additional flavor, either the seeds from a vanilla bean, some vanilla extract, or citrus zest.

By the way, this is the real way to make torrone, and by “real,” I mean the really old way. Today, most candy makers use a much faster method, where a caramelized sugar syrup is simply added to the whipped egg whites. I’ve tried this both ways, and while the modern technique is way faster, I much prefer this method.

Torrone, the classic Italian nougat, is easy to make at home. Nougat is a sweet confection made of whipped egg whites, sugar and/or honey, and nuts. In this traditional torrone recipe, the honey-sweetened candy is flavored with orange and almond flavors, and packed with toasted almonds.
The torrone I first tasted comes form a company out of New York, Torrone.co. They are putting their spin on the Italian treat. I based my recipe on their ingredient list but decided to go for a more traditional Italian style torrone and forgo adding any sugar so this recipe is short and sweet – honey, egg whites, and nuts.
Place honey on top of a double boiler over boiling water. Stir constantly, until honey caramelizes (approx 45 min to 1 hr). In a small saucepan, combine 2 Tablespoons water and 1 cup sugar, let mixture boil slowly until caramelized. Beat egg whites until stiff. Add stiff egg whites to honey a little at a time, mixing well.
