2. Start adding milk approximately one cup at a time until the mixture feels more moist and pliable.
3. Sprinkle the top of the mixture finely with the season salt and work that in as well.
4. (The size of the meatball is up to you- I like them on the bigger side so I roll them bigger than a golfball but smaller than a tennnis ball. I also prefer baking them in the oven over frying them. They seem to brown more evenly and they hold their shape better.).

2. In a medium bowl combine the bread with ground beef, eggs, parmesan and spices gently mix to combine well (I use my clean hands, its the best way to do it). Form into small balls ( I form the meatballs into the size of a golf ball). In a medium frying pan on medium heat, add the olive oil and the meatballs, brown them on all sides.
3. While meatballs are browning, in a separate, large deep pan add the olive oil, the tomato puree (or peeled tomatoes), spices and water, stir until well combined. Add the browned meatballs. Over medium heat, heat to boiling, then lower heat to medium low and simmer for approximately 20 minutes (covered), then raise the heat to medium, (leave pan slightly uncovered 1/3 uncovered) and cook an additional 20 minutes, until sauce has thickened and meatballs are cooked through. Serve immediately, top with freshly grated parmesan cheese if desired. Don't forget some crusty Italian bread to soak up the delicious sauce. Enjoy!

2. Put the meat in a large mixing bowl. Add the breadcrumbs, and pour the milk over the breadcrumbs and allow it to soak in for a minute.
3. Add the eggs, Pecorino-Romano cheese, chopped parsley, minced garlic, grated onion.PRO TIP: Include the upper half of the parsley stems when chopping. The stems of most soft herbs, like parsley and cilantro, are completely edible and have great flavor.
4. Remove your rings and bracelets and put them safely on the windowsill or a ring holder. Your hands are about to get a little messy. Mix the meatballs until combined -- mixing with your hands is the best, and arguably only, way. PRO TIP: Mixing the meatballs is an important step. It is important not to over-mix the meat. If the meat becomes too over-mixed, it will lose its ideal, fall-apart consistency. Using your hands helps control the mixing.

1. Place all of the ingredients, except for the olive oil, together in a bowl. I pour the milk onto the breadcrumbs, and let it soak in for a few minutes before proceeding. Mix until evenly combined.
2. Shape into meatballs (whatever size you prefer) and place in a hot frying pan with olive oil. (Alternatively, drop them into simmering tomato sauce and continue to simmer for at least another 40 minutes or so.)
3. Cook until browned all over. If you are using them in sauce, they will continue to cook, so there is no need to make sure they are completely cooked through. On the other hand, if you will eat them without further simmering in sauce, make sure they are thoroughly cooked. Serve as desired.

Are meatballs really Italian?

Yes, really! In Italy, meatballs are called Polpette. Though the ingredients are typically the same as what I am using (except for my grated onion technique) along with a similar tomato sauce, they are larger (about the size of golf balls) and they are served with bread rather than pasta.
