1. If you are using roasted garlic, roast your cloves prior to making your pesto. For instructions, click here: How to Roast Garlic. If using raw garlic, be sure to cut out the green inner part of each clove with the tip of a sharp knife. Also plan to give yourself some time to separate the basil leaves from the stems - it takes a while to complete this preparatory step, but it's necessary. You really don't want stems or flower buds ending up in your pesto.
2. You'll need your immersion blender and a half gallon mason jar. Add your basil, garlic, lemon juice, 1/4 cup olive oil, and a pinch of salt to the jar.Use your immersion blender to begin pulverizing the ingredients inside the jar, moving the blender up and down and in swirling motions to chop up the ingredients.

1. Wash and dry the basil leaves very well on a kitchen towel. Place them in a food processor with garlic, pine nuts and grated Parmigiano. Chop coarsely for a few seconds then add salt and Pecorino Fiore Sardo cheese cut into small pieces. Blend all the ingredients for about 1 minute.
2. Add extra virgin olive oil. Blend for about 5 minutes, until you’ll get a creamy green pesto sauce. Pesto must not heat up, so be careful to work quickly, using the food processor at minimum speed and at intervals, that is, blend a few seconds, stop and start again.
3. Before seasoning your pasta dish, if the basil pesto is too thick, add 1 or 2 tablespoons of the cooking water; this way you’ll have a warm homogeneous soft pesto sauce.

1. Chill the blender bowl either in the freezer or by adding water and ice cubes until ready to blend. Meanwhile, rinse, then soak, the basil leaves in water for about 10 to 15 minutes.
2. Combine the nuts, garlic, and olive oil in the blender. Blend until the nuts are very finely chopped and the mixture is creamy. Add the salt.
3. In several handfuls, lift the basil from the bowl of water. Shake some of the excess water off, but not all, and add it to the blender. Pulse in the blender until it is a smooth, beautiful green color. If necessary, add more water a teaspoon at a time until it blends and emulsifies fully.
4. Add the cheeses and blend again until fully incorporated and serve.PRO TIP: To store pesto, place it in a container and cover the top with a thin layer of olive oil. This acts as a seal, preventing oxidization. This pesto can be frozen for up to 3 months. Do not heat to defrost; let it thaw at room temperature for about an hour or two, or overnight in the refrigerator.

1. Start chopping the garlic along with about 1/3 of the basil leaves. Once this is loosely chopped add more basil, chop some more, add the rest of the basil, chop some more. I scrape and chop, gather and chop. At this point the basil and garlic should be a very fine mince. Add about half the pine nuts, chop. Add the rest of the pine nuts, chop. Add half of the Parmesan, chop. Add the rest of the Parmesan, and chop. In the end you want a chop so fine that you can press all the ingredients into a basil "cake" - see the photo up above. Transfer the pesto "cake" to a small bowl (not much bigger than the cake).
2. Cover the pesto "cake" with a bit of olive oil. It doesn't take much, just a few tablespoons. At this point, you can set the pesto aside, or place it in the refrigerator until you are ready to use it. Just before serving, give the pesto a quick stir to incorporate some of the oil into the basil. Francesca's mom occasionally thins the pesto with a splash of pasta water for more coverage, but for our gnocchi this wasn't necessary.

1. Wash the basil in cold water then dab it with a cotton cloth to remove the water being careful not to break the leaves.
2. Crush two cloves of garlic in the mortar and, when it is well crushed, add the coarse salt. Add the basil leaves a few at a time starting to pound them with a circular motion so that the basil releases the oil and the leaves do not break but gradually flake off.
3. Once all the basil has been added and crushed and when a green liquid comes out, add the pine nuts and continue to crush.
4. Add also the Parmesan and the Pecorino cheese to the mixture and, almost at the end, pour the oil so as to give it time to absorb all the flavors without overpowering anyone. Once the sauce is well blended, use it in the kitchen, on pasta and more.

1. Place the walnuts and garlic in the bowl of a food processor fitted with a steel blade. Process until coarsely chopped, about 10 seconds. Add the basil leaves, salt, and pepper and process until mixture resembles a paste, about 1 minute. With the processor running, slowly pour the olive oil through the feed tube and process until the pesto is thoroughly blended. Add the Parmesan and process a minute more. Use pesto immediately or store in a tightly sealed jar or air-tight plastic container, covered with a thin layer of olive oil (this seals out the air and prevents the pesto from oxidizing, which would turn it an ugly brown color). It will keep in the refrigerator for about a week.
2. Freezer-Friendly Instructions: Pesto can be frozen in an airtight container for up to 6 months. You can also divide your prepared pesto into the compartments of an ice cube tray and freeze. Once it’s frozen, remove the pesto cubes from the tray and put in a sealable plastic bag or airtight container. You can add the defrosted pesto cubes to soups, pasta dishes, eggs, sandwiches, and potatoes.

1. Wash the basil leaves in cold water, discard the stems, and dry thoroughly on paper towels (do not rub the leaves). Also peel off any thick spines from any larger basil leaves. I use my salad spinner for washing and drying the basil leaves.
2. In a blender or food processor, add garlic, toasted pine nuts, and salt; process for approximately 15 seconds. Using a rubber spatula, scrape the mixture from the sides of the bowl. Add basil leaves, lemon juice, and olive oil, using the pulse technique, turning on and off, to shred the basil. A single batch works well in a blender, but use a food processor for larger batches.
3. Blend in the cheese. Now taste and see if you would like to add some more of any of the ingredients to your liking. For example, if you like your pesto to be thinner, add some extra virgin olive oil.
