1. Preheat the oven to 375 degrees Fahrenheit. Spray two 9-inch round baking pans with non-stick spray infused with flour, or grease with butter and dust with a light coating of flour.
2. Add the eggs and sugar to a large mixing bowl. Using an electric mixer, beat the eggs and sugar for 6 to 10 minutes until the mixture has increased in volume and thickened to a consistency of whipped heavy cream. The required time varies depending upon the power of your electric mixer.
3. In a separate bowl sift the flour and baking powder together. Spoon half the flour into the egg mixture and gently fold it in using a spatula. Repeat with the second half of the flour, folding gently to fully incorporate the flour. Add the vanilla essence with the flour if desired.
4. Pour half of the cake mixture into each of the prepared baking pans. Bake in the preheated oven at 375 degrees Fahrenheit for 15 minutes, then reduce the heat to 350 degrees and bake for an additional 10 minutes. The sponges will be golden brown, with a slight spring to the touch when cooked.

1. Set the oven to 350F Grease a 9 inch springform pan.
2. Make the custard sauce ahead of time. Bring the milk to a simmer over medium heat. Meanwhile whisk the yolks and sugar until well combined. Drizzle a little of the hot milk into the egg mixture, whisking all the time. Drizzle a little more, then transfer that back into the pan of hot milk and continue cooking, stirring constantly, until the mixture coats the back of a spoon. Do this slowly, over medium heat, and I like to use a silicone spoon or spatula to scrape the bottom and sides of the pan as it heats. The mixture will become velvety and thickend, but it will not be as thick as pudding. It will continue to thicken as it cools, so don't overcook or it can curdle. Stir in the vanilla.
3. Pour the custard through a sieve (to catch any stray lumps) into a heat proof jar or bowl and place a piece of plastic wrap onto the surface so it won't form a skin as it cools. Put in the refrigerator until completely chilled.
4. To make the streusel topping, blend the bits of butter into the flour, sugar, and oats until the butter is incorporated and the mixture has a coarse crumbly texture. Put in the refrigerator.

Frequently Asked Questions

What are some easy Irish desserts?

Irish desserts often make good use of fresh fruits. A simple mixed berry and cream dish is easy to make and enjoyable in the warmer times of year, or a hot berry crisp is another excellent option. Apple cakes and cobblers are also favorite Irish desserts.

What are traditional Irish recipes?

Representative traditional Irish dishes include Irish stew (made with lamb, mutton, or beef), bacon and cabbage (with potatoes), boxty (potato pancake), coddle (sausage, bacon, and potato), colcannon (mashed potato, kale or cabbage, and butter), and, in Ulster, the soda farl.

How do you make Irish potato cakes?

Irish Potato Cakes. Directions. Combine 2 cups leftover mashed potatoes, a heaping 1/3 cup flour, 2 tablespoons milk and 1 tablespoon chopped mixed herbs in a bowl; knead until smooth. Season with salt and pepper. Divide into 4 balls on a floured surface and flatten each into a 3-inch patty.

What is a favorite Irish dessert?

Apple cakes and cobblers are also favorite Irish desserts. Citrus is sometimes used in desserts, such as in frosting or toppings for cakes, to give them a sweet and tangy taste. It may also be used to make a tangy citrus pudding for a more unique taste than the more traditional chocolate or vanilla puddings.
