Place the potatoes onto the metal rack inside your Instant Pot, and pour 1 cup of water into the bottom of the pot. Select “Manual,” and cook on high pressure for 12-20 minutes.

When the cooking time is elapsed, turn off the Instant Pot and all the pressure to release naturally. Fluff rice and serve immediately, or store in fridge or freezer for future meals.
