1. Add all the ingredients in a spice grinder and grind to fine powder form. Sift the powder through a fine sieve to remove any rough pieces and store in an airtight container in the refrigerator. You can keep this for about a month.
2. In a large pot add the beef shanks along with 1 ½ teaspoon of ginger paste, 1 ½ teaspoon of garlic paste, bay leaf, 1 cinnamon stick, 1 teaspoon of salt and 5 cups of water. Boil the shanks on low-medium heat till the meat is tender and well done, about 2-3 hours. (Make sure to add little more water if the water starts to dry out too fast; there should be enough water in the pot to cover the meat).
3. Once the meat is done, use a slotted spoon to carefully remove the meat from the liquid and keep aside. Measure the stock (liquid) and add water if needed to make it 4 cups, reserve. Discard the bay leaf and cinnamon. You can do this step up to 2 days in advance. Let the meat and stock stay together while you store them in refrigerator, remove the meat from the stock just before you start to put the stew together.
4. In a non-stick saucepan or a pot, heat oil over medium heat. When the oil gets hot, add the sliced onions and stir-fry constantly until they turn golden-brown in color. Don’t over fry or the onions will burn.

1. Sprinkle 1 teaspoon each of salt and pepper over the cubes beef. Massage it into the meat and then set it aside to rest for 10 minutes.
2. Heat the oil in either a large skillet or a cooktop-safe slow cooker insert over medium high heat. Place some of the beef cubes into the pot in a single layer--do not crowd the pan, you can brown the beef in batches. Brown the cubes, about 8 minutes, before removing to the bowl and adding the next round. When you are done, place the beef in the bowl and set it aside.
3. Add the mustard seeds to the pan. Ideally, they will pop before you add the onions, but if there is a lot of beef remnants stuck to the pan, do not let those burn. If you have time for the seeds to pop, cover the pan with a lid slightly ajar so the seeds do not pop out of the pan.
4. When the popping has slowed--or when you are concerned the pan may scorch, add the onions with a pinch of salt. Stir, scraping up the bottom of the pan as the liquid from the onions deglazes the pan. If you have anything seriously stuck to the pan, splash a little water into the pan.

1. Using a sharp chef's knife and sturdy cutting board, trim excess fat and cut the beef into large bite-size cubes (about 2 inches). Set aside.Pro tip - don't cut the meat into small pieces as the slow cooking will eventually shred it.
2. In a pan or Dutch oven pot over medium heat saute onions in oil for about 5 to 7 minutes until lightly golden.Pro tip - the caramelized onions give this curry that depth of flavor so cook low and slow so it does not burn.
3. Add the ginger and garlic - saute another minute. Then add the bay leaves,, spices (curry powder, cayenne, paprika, garam masala), and 2 tbsp of water. Pr tip -the water prevents the spices from burning. But, do not add too much we still need them to cook and become aromatic
4. Once you can smell the wonderful spices - add the yogurt and meat. Season with salt and pepper. then add the lemon juice and make sure everything is well combined Pro tip - combine the yogurt well with the meat and cook on medium-low so it does not curdle.

1. Heat one tbsp of the oil in a casserole pot over a medium-high heat. Season the beef and fry in the pot for 5-8 mins, turning with a pair of tongs half way until evenly browned. Set aside on a plate.
2. Heat the remaining oil and butter in the pan and add the onions. Fry gently for 15 mins or until golden brown and caramelised. Add the garlic, ginger, chilli, turmeric, ground coriander and cardamom and fry for two mins. Tip in the tomatoes, stock and sugar and bring to the simmer.
3. Add the beef, put a lid on top of the curry and cook over a low heat for 1 ½ – 2 hrs or until the meat is tender and falling apart. Remove the lid for the last 20 minutes of cooking.
4. Stir through the garam masala and cream (if using) and season to taste. Scatter over the coriander and serve with naan breads or rice.

What's the best way to cook Indian fried beef?

Put the marinated meat into a pressure cooker along with ¼ cup water and cook on medium-high heat. After 3-4 whistles, take it off the heat and let it cool down. In a pan, heat 2 tbs coconut oil and add mustard seeds. Once they start to splutter, add onions, serrano peppers, curry leaves and coconut pieces.

What's the best way to make Indian beef stew?

In a non-stick saucepan or a pot, heat oil over medium heat. When the oil gets hot, add the sliced onions and stir-fry constantly until they turn golden-brown in color. Don’t over fry or the onions will burn. Add the remaining 1½ teaspoon of ginger paste and 2 teaspoons of garlic paste and do a quick stir.

Can you make a beef curry in India?

It’s not every day you come across a beef curry in Indian cuisine. That said, I find beef is vastly underrated when it comes to cooking Indian recipes. A beef curry such as this beef madras offers a different level of complexity. A madras curry in itself is quite a spicy curry, with moderate to high levels of heat.
