Vegetarian pulao recipes offer some of the most interesting variations. An Indian vegetarian fare is incomplete without a dish of rice on the table. A perfect alternative for those who doesn't like plain rice, pulao makes for an ideal dish that isn't too heavy nor it is too light or bland like plain rice.
A Fragrant long grain rice variety that is ideal for rice recipes like Pulao, Biryani, Fried rice and any variety rice recipe too. You can also make this recipe using any short grain rice variety like Kolam etc. Since I made this over the weekend, I thought of using the Basmati Rice instead.
Just use rice and water in 1:2 ratios. i.e. for every one cup rice two cups water should be added. You can also prepare equally delicious mixed vegetable rice pulao in a pan with a lid. Use same amount of ingredients as mentioned in this recipe, cover pan with a lid and cook it on low flame for 8-10 minutes.
Place plenty of water (about 2 litres) to boil. Add juice of half a lemon and add rice. Add 2 tsp of salt and bring back to a boil. Cover and cook rice till it is almost done. Drain out any excess water, and cover and keep aside till required.
