Cooking Method Add 2 tbs oil to a heated pan. Add cinnamon stick, coriander, cumin, star anise, cloves and cardamom to heated oil. Let the spices fry in the oil for 2 minutes. Add onions, ginger and garlic and fry until onions turn translucent. Add ground cinnamon, ground cumin, curry powder, turmeric and chilli powder and fry for 5 minutes.
Heat a wide pan and add the oil. Once hot, add the whole fennel seeds and red chillies. Add the onions and sauté until they start to brown, then add the minced garlic. Remove the fat from the pork and cut into strips. Season the pork with salt and lots of black pepper and ½ tsp of the turmeric.
Add the turmeric and fry for another 20 seconds. Cool, then grind to a coarse powder. Heat the oil in a heavy-based pan or karahi over a medium-high heat. Add the pork, in batches if necessary to avoid overcrowding, and fry for 10 minutes, stirring occasionally, until browned.
Reduce the heat to medium-low and add the masala. Pour the water in the blender or processor bowl to rinse it out and add it to the pan. Cook, stirring frequently, until the masala turns golden. Return the pork, onions and potatoes to the pan, cover, and simmer until the pork and potatoes are tender and the sauce is very thick, about 30 minutes.
