2. Mix the beef, pork, remaining 1 teaspoon salt, and black pepper in a bowl. Do not over mix or the burger will be too tightly bound. Portion the meat into 12 (2-ounce) balls, then flatten the balls into patties about 2 1/2 inches round.
3. Preheat a grill and grill the burgers for 4 to 5 minutes on each side, or until the internal temperature reaches 160 degrees F.
4. Combine the mayonnaise-mustard mixture with the lemon juice and shredded romaine. Top the bottom bun with the dressed lettuce, a burger, some caramelized onions, and cheese of choice. Add the top bun and serve.

2. Heat a large pan or wok over high heat. Dump in the ground pork/beef and let cook, undisturbed for a few minutes until it is dark brown on the bottom. Flip and repeat on the other side. When both sides are dark, add 1 Tablespoon soy sauce and break up the meat, cooking until it is browned on all sides. Remove from pan and set aside.
3. Reduce heat to medium-high. Drain off most of the oil, leaving enough to cook the vegetables (about a tablespoon or so). If you have lean meat, you might need to add a Tablespoon of butter or coconut oil. Add the onions and mushrooms and sauté until the mushrooms are a little brown. Add the carrots and cook for about 5 minutes more. Add the ginger, garlic, chili powder, rice vinegar, 1 Tablespoon soy sauce, and the leafy greens. Cook until wilted, then mix in the meat.
4. Taste, add remaining 1 Tablespoon soy sauce if needed, and adjust seasoning as desired. Serve over rice and enjoy!

1. In a shallow bowl place the dry bread slices and add half the beer, let soak until liquid is fully absorbed. Alternatively, use water and then yogurt (see notes below).
2. In a mixing bowl combine the ground meat, crumbled soaked bread, eggs, onions, parsley, cumin, garlic, oregano, salt and pepper. Also add the remaining beer. Use your hands to mix and create a homogeneous mixture. Cover with plastic and let refrigerate for a couple of hours.
3. Bring to room temperature and start shaping the kofta balls. Dip your hands in a bit of cooking oil first to prevent stickiness. Create uniform balls, about as large as to comfortably fit in the palm of an average sized hand. Arrange the meatballs onto a greased pan and slightly press each one to flatten them a bit.
4. Preheat your grill to medium-high and be sure to grease the grates. Place the kofta over direct heat. At first they will stick and after about 2 mins their lower surface will release. Use grill spatula to turn them over. Cook for about 4-5 minutes per side. Internal temperature must be at least 160 F before you take them off the grill.
