1. Place the steaks and compound butter on the counter and allow them to come up to room temperature for about an hour.
2. Light grill and set up for high direct heat. You’ll want to get the coals as hot and as close to the cooking grate as possible. If using a gas grill, allow the grill to preheat with the lid closed for at least 15 minutes.
3. Evenly coat strip steaks with olive oil and season them liberally with coarse sea salt. Put two pats of compound butter on each plate and set aside.
4. Place steaks directly over hot coals and flip every 20 seconds. With each flip, place the steaks in a different spot on the grill grate. This allows the best searing to take place through conductive heat. The steaks below have been on the grill for about 2.5 minutes total, and you can already see that nice crust forming.

Grilled New York Strip Steaks from Barefoot Contessa. <p>In a small bowl, combine 2 tablespoons salt, 1 tablespoon black pepper, the brown sugar, coffee, garlic, chipotle powder, and red pepper flakes. Pat the steaks

1. In a small bowl, combine 2 tablespoons salt, 1 tablespoon black pepper, the brown sugar, coffee, garlic, chipotle powder, and red pepper flakes. Pat the steaks dry with paper towels, place them in a baking dish, and rub them all over with the olive oil. Sprinkle the steaks all over with the spice mix, using it all. Cover the dish and refrigerate for at least 2 hours to allow the flavors to get into the meat.
2. When ready to cook, heat enough charcoal to cover half of the grill (I fill a charcoal chimney ¾ full). Pour a layer of hot coals on one side of the grill, leaving the other side empty.
3. Cook the steaks on the hot side of the grill for exactly 2 minutes on one side, turn them over, and cook for exactly 2 minutes on the other side. (Be sure your timer is accurate.) Move the steaks to the cool side of the grill, put the lid on, check to be sure the vents are open, and cook for 8 to10 minutes, until a meat thermometer inserted sideways into the middle of the steak registers between 115 degrees for rare, and 120 degrees for medium-rare, and 125 degrees for medium. Transfer the steaks to a plate, cover the plate tightly with aluminum foil, and allow to rest for 15 minutes. Remove the foil after 15 minutes or the steaks will continue to cook! Slice the steaks, sprinkle with salt, and serve hot or warm.
4. Note: With a gas grill, cook the steaks for 2 minutes on each side, then turn off 1 or 2 burners and place the steaks on the cool side of the grill to cook for 10 to 12 minutes.

1. If possible, rest the steaks at room temperature for about 1 hour, allowing the steaks to come to room temperature.
2. Trim the beef of extra fat to prevent "flare-ups" that will burn your steak.
3. It is best to apply salt and pepper at the start of the resting period. Just before starting to grill is OK if you skip the rest, or you forgot. Use coarse salt and pepper. I used my 7:2:2, which is kosher salt: pepper: garlic.
