1. Heat half the oil in a Dutch oven or large pot over medium-high heat. Season the chicken with salt and pepper. Add half the chicken to the pan, browning the pieces all over, but not cooking all the way through. Remove from the pan and set aside. Repeat with the remaining half of the chicken. Set aside.
2. Add the remaining oil, add the onions and season with salt. Lower the heat to medium, stir the onions well, and cover the pan. Cook for about 5 minutes, occasionally removing the cover and stirring the onions. This will allow them to sweat and soften. Once they have softened a bit, remove the cover and keep stirring them, scraping the browned fond from the bottom of the pan, until they are tender, another 10 minutes or so.
3. Then add the garlic, tomato paste, adjika if using, and Aleppo pepper. Stir well, and cook for about 1 minute.
4. Add the diced tomatoes. Raise the heat until the mixture comes up to a gentle boil. Season with salt, and add the chicken back into the pan with any accumulated juices. Lower the heat to maintain a simmer and cover the pan. Continue to simmer until the chicken is cooked through, about 10 minutes or slightly longer if using thighs (internal temperature using an instant read thermometer should be 165°F). Taste and adjust seasoning if needed.

With a sharp knife, slice down the middle of the breastbone, to separate the rib cage (backbone should remain in one piece), then using strong kitchen shears cut the breastbone from the chicken. Open the chicken up like a book and press down on the backbone to flatten the carcass.

Cover the chicken with a piece of parchment or wax paper (you can also use a heat-resistant plate). Place a heavy cast iron skillet or any type of skillet on top of the chicken and weigh it down with cans of food, bricks, rocks or anything heavy. (I placed a pot filled with water on my chicken and then set a cast iron skillet with a lid on top of the pot). Cook the chicken for 20-25 minutes.

2. Reduce the heat to medium-low and melt butter. Add in onion and a pinch of salt and cook, stirring occasionally, until softened, scraping off any browned bits from the bottom of the pan as the onion releases moisture, about five minutes. Add garlic and cook until very fragrant, about 30 seconds.

1. Heat 1 tablespoon of vegetable oil in a large saucepan over medium-low heat until shimmering. Add onions and cook until translucent but not browned, about 5 minutes. Add the tomato paste and stir until well-combined and fragrant, about 1 minute.
2. Add eggplant and about 1 teaspoon of salt to encourage moisture release. Stir to combine and cover, cooking for about 5 minutes, or until the eggplants release a fair amount of moisture and decrease in size.
3. Add peppers, chilli and tomato, stir to combine, cover and simmer, adding a bit of water if necessary to thin out the stew. Cook for about 10-20 minutes until eggplants are completely cooked through and the mixture is homogenous and flavourful.
4. Add garlic and half of the cilantro, stir to combine and cook for about 2-3 more minutes. Turn off heat and add remaining cilantro. Allow to cool slightly before transferring to an airtight container and refrigerating for a few hours, preferably overnight. Serve cold.
