Steps: 4
1. Preheat the oven to 350 degrees F.
2. Butter 2 (8-inch) square nonstick pans and coat with flour, tapping off excess. Place the flour, sugar and salt in a food processor and pulse once. Add butter and pulse until mixture resembles peas. Press the shortbread mixture into prepared pans and bake until golden brown around the edges, about 20 minutes. Remove from the oven and let cool completely.
3. In a heavy-bottomed saucepan over medium-low heat, combine the condensed milk and 2 tablespoons of butter. Slowly bring the mixture to a boil, stirring continuously. Continue stirring over the heat until mixture becomes thick and amber in color, about 15 minutes. Pour the caramel over the cooked shortbread and spread evenly using an offset spatula. Cool to room temperature.
4. In a glass bowl set over a saucepan of simmering water, melt the chocolate. Once chocolate has melted, pour it over the cooled caramel layer. Cool at room temperature for about 10 minutes, and then place in the refrigerator to cool completely, allowing chocolate to slightly harden but not get hard. Cut into 2-inch squares and enjoy, or store in an airtight container, at room temperature, or my favorite - keep in the refrigerator for a yummy sweet and cool treat!

2. Add the chopped semisweet chocolate to a heatsafe mixing bowl set over a pan of simmering water. Add the coconut oil to the bowl with the chocolate and allow it to melt. Heat, stirring, until smooth, 2 to 3 minutes. Leave the mixture in the pan, over the water, until ready to use.
3. In a separate bowl, add the chopped chocolate candies and candy bars and mix to combine.
4. Spoon the dulce de leche into a microwave-safe bowl and microwave in 15-second increments, stirring in between to make sure it doesn't burn, until slightly softened and more spreadable. The time needed will vary on your microwave--roughly 30 to 90 seconds.

2. Crush your gluten-free chocolate chip shortbread. I usually place mine in a sandwich bag and hit them with a rolling pin or pulse them in a food processor. You can make them quite small or have some chunkier bits.
3. Melt your butter in the microwave in short bursts, mixing in between.
4. Pour your melted butter into your crushed shortbread gradually and mix together, either in a large mixing bowl, or in the bowl of your food processor. Stop adding the melted butter if it starts to look wet, it should be just enough to coat the shortbread crumbs.

1. Preheat the oven to 350 degrees. Line a 9-inch square pan with aluminum foil, pushing the foil neatly into the corners and up the sides of the pan, using two pieces if necessary to ensure that the foil overlaps all edges (the overhang will help removal from the pan). Spray the foiled pan with nonstick cooking spray or grease with butter.
2. In the bowl of a food processor fitted with a metal blade, combine the flour, brown sugar, cornstarch and salt; process until well combined and no lumps of brown sugar remain. Add the butter and pulse until a coarse meal forms. Add the ice water and egg yolk and blend until moist clumps form. Dump the dough into the prepared pan and press with your fingers into an even layer (dust your fingers with flour if the dough is too sticky). Pierce the dough all over with a fork and bake until golden, about 20 minutes. Set aside to cool.
3. Whisk the sweetened condensed milk, brown sugar, butter, golden syrup, vanilla and salt together in a medium saucepan over medium heat until the sugar dissolves, the butter melts and the mixture comes to a boil. Attach a candy thermometer to the side of the pan and boil gently, whisking constantly, until the caramel is thick and the temperature registers 225 degrees F, about 6 minutes. Pour the caramel over the warm crust; cool for about 15 minutes, or until caramel is set.
4. Place the chocolate and cream in a microwave-safe bowl. Microwave in 20 second intervals, stirring in between, until the chocolate is about 75% melted. Stir, allowing the residual heat in the bowl to melt the remaining chocolate, until smooth (if necessary, place the chocolate back in the microwave for a few more; just be sure not to overheat or the mixture will curdle). Spread the chocolate over the caramel layer. Refrigerate the bars until the chocolate is set, at least 1 hour. Using the foil overhang, lift the bars out of the pan and transfer to a cutting board. Cut into small squares and store in the refrigerator until ready to serve.

1. All I did here was smush the digestives in a small pan, with a steak tenderiser. It was fast, and much preferable to putting the biscuits into a bag and smushing them that way. Less mess and no chance of the bag bursting.
2. Add the butter to the biscuits. I did think about microwaving, but as the digestives were in a pan, I just put in the butter, and heated it up. I used soft butter, otherwise, having the biscuit in at the same time as the butter could have ended up with toasted digestives.
3. Once the butter is melted and mixed in with the biscuits, take off the hob and put it into a small cake tin. I had some paper cases, so used one of those. It was about 6 inches in diameter. Spread the biscuit base and pat it down with the back of a spoon.
4. The caramel is cold, so I didn't wait for the base to cool. I simply spread the caramel over the top, and gently made sure the whole base was covered.

1. Line a baking tin with greaseproof paper. I use a 23cm square tin, although I have to create a little divider with tin foil (see pics below) as only 2/3 of the space is needed. So if you have a smaller tin (23cm x 16cm) feel free to use than instead.
2. Blitz the biscuits in a mini blender until you have a fine crumb. (You can also use the end of a rolling pin to break them up in a bowl if you don't have a mini blender, it just takes a bit longer.)
3. Melt the butter in the microwave and pour into a bowl with the biscuit crumbs. Mix until full combined. Tip the biscuit mix into the lined tin and spread across two thirds of the base, using a fork to press down and compact them. Create a little divider using tin foil to keep the edge in place (pics below), if you are using a square tin like me. Then transfer to the fridge to chill for 30 mins.
4. 5 mins before the end of chilling time, tip the Carnation caramel into a small saucepan. Bring to simmering point (using a low heat), then allow it to bubble for 5 minutes to thicken it slightly.

1. First make the caramel by boiling the tins of sweetened condensed milk in water. Place the unopened tins in a pan and cover with cold water. Bring to the boil and keep simmering. Top up with more water every so often to ensure that the tins remain completely immersed in water. After 2.5 hours remove the pan from the heat and allow the tins to cool in the water.
2. Preheat the oven to 180c and grease a tin. I used a 32cmx22cm tin.
3. Mix the flour and sugar together in a bowl and rub in the butter until it reaches the consistency of breadcrumbs.Tip the mixture into the tin and press down with the back of a spoon until it is all even and level. Bake for 20 minutes in the oven and leave to cool in the tin on a wire rack.
4. Once the caramel and biscuit base have cooled, pour the caramel onto the biscuit and smooth with a spatula. Chill in the fridge for 20 minutes.
