1. In the bowl of a stand mixer fitted with whisk, beat 6 eggs on high speed 1 min until foamy. Gradually add 1 cup sugar then continue beating on high for 8 min. It will be whipped and forming thick ribbons when you pull up the whisk.*
2. In the bowl of a stand mixer fitted with whisk attachment, combine 16 oz cream cheese, 1 cup butter, 2 1/2 cups powdered sugar and 2 tsp vanilla. Beat on low to combine then increase to high and beat 5-6 mins, scraping down the bowl as needed. Frosting should be whipped, soft and spreadable. Transfer 1 cup frosting to piping bag fitted with large open star tip and refrigerate until ready to use for the topping.
3. A mango has one long, flat seed in the center of the fruit that goes from stem to nose. Slice off the sides around the seeds of all 4 whole mangos resulting in 8 halves. Set aside 4 halves - you will need them to decorate the top. Dice remaining 4 halves and scoop them out of their skin then transfer these to a blender and process until puréed. Taste the mango purée and add sugar to taste if needed.
4. Place the first sliced cake layer on a platter and spread with 1/2 cup mango purée. On the second cake layer, spread 1/2 cup frosting and place it frosting-side-down on the first layer so the cream and mango are hugging. Repeat with remaining layers then cover top and sides with remaining frosting. Pipe reserved frosting around the top border of your cake.

1. Preheat the oven to 350F/177C and line two or three, 8-inch cake rounds with parchment paper, leaving the sides ungreased. Place the eggs, sugar and vanilla into a stand mixer bowl and whisk on high speed for 8 to 10 minutes, until eggs are very fluffy and almost white in color. In a separate bowl, combine the flour and baking powder. Sift the dry ingredients into the eggs, in small increments or thirds, folding gently but thoroughly after each addition. Keep the eggs as light as possible! Watch my video recipe to see how it's done.
2. Divide the sponge cake batter evenly between the pans. Bake in preheated oven for 22 to 25 minutes, until the tops of the cake layer are a rich, golden color and spring back when tapped lightly. Remove the cakes from the oven and run a knife along the edge of the pan to release the cakes. Allow them to cool in the pans for about 15 to 20 minutes, then invert onto a wire rack to cool completely. Once completely cooled, cut the layers in half, if prepared in two pans. If using three pans, the layers can be kept whole or split in half.
3. Next, prepare the mango puree. Peel and chop three large mangos and place them into a food processor or blender. Pulse the fruit until a smooth puree forms. If desired, add a squeeze of lemon juice to the puree to help preserve the color. Set aside 3/4 cup of the puree for the whipped cream frosting.
4. For the mango frosting: place the softened cream cheese into a medium mixing bowl and whisk for 1 minute until creamy and smooth. Melt the chocolate chips in the microwave or on the stove top using a double boiler. Add the chocolate to the cheese and mix again for 1 minute. Add in the mango puree and mix again for 1 to 2 minutes, until the mixture is creamy and smooth.

1. Preheat oven to 350 F. Grease the bottom an 8-inch round cake pan and line it with parchment paper. In a bowl of a stand mixer, beat the eggs for about a minute until foamy. Add the sugar gradually and continue to beat until the eggs have tripled its volume. You will know when it is ready if you lift the beater and the batter falls back in the surface forming ribbons that do not sink in right away. This should take about 7-10 minutes.
2. Whip the heavy cream with the icing sugar until stiff peaks form using a stand mixer or a hand-held mixer. Fold in the mango puree until the mixture is uniform in color. Refrigerate the mousse while you work with the gelatin.
3. Stir sugar in the mango puree. You can add more sugar (or less) if you prefer. Place water in a small microwaveable ramekin or bowl. Sprinkle the unflavored gelatin over the water and let the mixture stand for half a minute. Microwave the mixture until it is clear, about 10 seconds or so. If necessary, microwave for an additional of 5 seconds at a time.
4. Boil sugar and water until syrupy. Turn off heat immediately and transfer to a jar. Refrigerate until needed.

1. Cake: Position a rack in the center of the oven. Preheat the oven to 350 degrees F. Liberally butter and flour a 10-inch tube or Bundt pan.
2. Sift the flour, baking powder and salt into a large bowl. In another large bowl, using an electric mixer beat the 1 /12 cups of butter and sugar until light and fluffy. Add the eggs, beating well after each addition. In batches, add the flour mixture, alternating with the buttermilk and ending with the flour mixture.
3. Pour the batter into the prepared cake pan. Bake until the cake is golden and a cake tester inserted into the center comes out clean, about 45 to 50 minutes. Transfer the cake to a wire rack and cool completely in the pan. Invert the cake onto the wire rack, then put it on a cake plate or platter. (Cooks Note: The cake can be prepared 1 day ahead. Cover tightly with plastic wrap and store at room temperature.)
4. Topping: Combine the mango, water, sugar cream cheese and tequila, if using, in a blender or food processor. Blend until smooth and thick, adding extra water, if needed. Taste and adjust the sweetness with extra sugar, if needed.
