1. Place the egg whites in the bowl of a stand mixer and let come to room temperature, about 30 minutes.
2. In a microwave safe 2-qt bowl (I used a large plastic one), combine the sugar, water, corn syrup, and salt. Microwave uncovered on high for 4 minutes; stir until sugar has dissolved. Cook 6-8 minutes longer, stopping to stir every 2 minutes and checking with a candy thermometer for a temperature of 260° (hard-ball stage). This took me exactly at the 8-minute mark. Just before the temperature is reached, begin whipping your egg whites until stiff peaks form.
3. With the mixer running on high speed, slowly begin pouring the molten sugar mixture into the egg whites. It should take you a good minute or two to fully add in the hot sugar mixture to the egg whites - pouring in a slow but continuously steady stream. Beat until the candy begins to hold its shape but loses some of its glossiness - this could take anywhere from 15-20 minutes. Around the 15-minute mark, I like to check by spooning about a teaspoonful onto parchment paper; if it holds its shape, it's ready. Once it is at that stage, stir in the pecans and vanilla until just barely combined - overmixing will lead to tough and crumbly divinity.
4. Working quickly, drop heaping Tablespoonfuls of the candy onto parchment paper. You should get anywhere from around 16-20 pieces of candy, though you can make smaller pieces to yield more. Allow the candy to sit, uncovered, overnight so it has time to set and dry some to the touch. Store any leftover candies airtight at room temperature.

Using two spoons, drop the divinity onto waxed paper, using one spoon to push the candy off the other. This may take a little practice because the technique is to twirl the pushing spoon, making the candy look like the top of a soft serve ice cream. If the candy becomes too stiff, add a few drops of hot water.

1. Cook sugar, corn syrup and water (use 1 tablespoon less water on humid days) in 2-quart saucepan over low heat, stirring constantly, until sugar is dissolved. Continue cooking, without stirring, to 260°F on candy thermometer or until small amount of mixture dropped into very cold water forms a hard ball that holds its shape but is pliable.
2. Beat egg whites in medium bowl with electric mixer on high speed until stiff peaks form. Continue beating while pouring hot syrup in a thin stream into egg whites, beating constantly on medium speed. (For best results, use electric stand mixer, not a portable handheld mixer since beating time is about 10 minutes and mixture is thick.) Add vanilla. Beat until mixture holds its shape and becomes slightly dull. (Mixture may become too stiff for mixer.) Gently stir in nuts.
3. Drop mixture from buttered spoon onto waxed paper. Let stand at room temperature at least 12 hours, turning candies over once, until candies feel firm. Store in airtight container.
