38. Coat the chicken all over with salt. Put on a plate. Over medium high heat in a large heavy pot with lid, melt the butter and add the olive oil. When the butter/oil is hot, add the chicken and sear on each side to a golden brown.
39. Add the soup and 4 cups of chicken broth and blend together moving the chicken around in the pot. Add the chili flakes, Greek seasoning mixture, fresh herbs, bay leaves, garlic cloves, and onions. Cover tightly (important to the steaming/cooking) and cook over medium heat for about 75 minutes stirring occasionally. (Note: If your lid is not tight to the pot, add a doubled layer of foil under the lid.) Add another cup of chicken broth if needed.
40. Add the lemon juice, zest, rice and remaining broth (if needed). Turn to medium low, cover tightly with the lid and cook another 45-60 minutes. Stir a couple of times.
41. Turn heat to low and add the thawed peas on top. Cover with the lid and let the peas steam on top about 20 minutes. You’ll find that some of the rice may be sticking to the bottom and have some crispy to it—that’s quite all right and adds to the flavor! Ready to serve on tin plates, and you’ll feel like you’re camping!

1. Take note of the weight of your chicken and guesstimate how it will need to cook: A chicken takes 20 minutes per pound of weight + 20 minutes extra. (please note this is not at all scientific as I have no way of testing the internal temperature of the Dutch oven - see above to find how to ensure the meat is cooked and safe to eat)
2. About an hour before you want to start cooking, build up a good strong fire.
3. Separate the fire into two - a small fire on one side producing new coals and a good bed of embers on the other side for cooking on.
4. Place a trivet in the bottom of your Dutch oven. You can also use a layer of root vegetables, or even a bunch of scrunched up tin foil. Anything that will raise the chicken off the bottom of the pan to prevent it burning.

What to cook in a Dutch oven?

Dutch ovens are best to cook flavor-rich soups and stews. They help intensify the flavors by steaming them slowly for a sufficiently long period. You need to add the ingredients strategically allowing sturdy vegetables like onions, carrots and potatoes to cook longer. By the time the flavors are extracted,...

What is a Dutch oven for camping?

Camp Dutch Ovens. A camp Dutch oven is a cast iron pot with 3 legs on the bottom, a flat lid with a 1-2 inch lip, and a wire handle. The legs on this pot help the oven to sit up off the coals allowing air to circulate below. The lip around the circumference of the lid holds coals so you can easily heat from the bottom and top of the oven.

How long do you cook chicken thighs in a Dutch oven?

Put the lid on the Dutch oven and place in the oven. Cook the chicken for 1 hour. Remove the Dutch oven from the oven and carefully remove the lid. How do you cook chicken thighs in a Dutch oven?

Directions Preheat the oven to 350 degrees F. Rinse and dry the chicken thighs and season with salt and pepper. Heat 1 tablespoon olive oil in a Dutch oven over medium-high heat. Brown the thighs on both sides, working in batches if needed. Add the remaining 1 tablespoon olive oil to the Dutch oven and cook the onions until soft, about 5 minutes.
