Maintain the grill, charcoal, and wood chips, letting the turkey cook for 3 ½ to 4 hours–until the smoked turkey legs have a nice, dark smoky color that a young Chinese girl once thought only existed within the walls of Disney

1. Combine all of the ingredients for the brine in a large pot and bring to a boil. Let cool. if you're short on time, you can also start by boiling the brine with just 2 quarts of water and then adding ice to cool to 1 gallon of brine.
2. While that's happening, rinse your turkey legs and set aside in a large container (one that will fit into your refrigerator). You may want to use two separate containers. When the brine has cooled, pour the brine over the turkey legs, making sure they are totally submerged. Cover and refrigerate overnight.
3. If you want to expedite the process, use a marinade injector, injecting one syringe-full of brine into each turkey leg (1½ syringe-fulls for the larger turkey legs). Then, let brine as usual for 5-6 hours. This way, the turkey legs don't need to brine overnight. Sounds gruesome, but it really expedites the process, and these marinade injectors are pretty inexpensive!
4. When the turkey legs are ready, heat your charcoal. Your key tools for this recipe are a charcoal grill, a chimney starter, charcoal, and wet wood chips, which provides the smoky flavor. Fill your chimney with charcoal and light the coals with a piece of newspaper. Let heat for a solid 15-20 minutes or so--until the coals are slightly white hot. Also, take 1-2 handfuls of wood chips and soak them in water while the coals are heating.

1. Prepare the brine. In a large bowl, combine the salt, brown sugar, smoked paprika, onion powder, garlic powder, black pepper, and cayenne pepper. Then add the boiling water and carefully stir until all of the spices are dissolved. Add the ice cubes and allow the brine to cool down. It should be cool to the touch. If it is still hot, add another cup of ice.
2. Soak the turkey legs. Use a large bowl or container that can hold all of your turkey legs and pour the brine in with the turkey. If you do not have a large enough container, you can use gallon size Ziploc bags. Be sure the brine covers the turkey legs entirely. If it doesn’t, add cool water until the brine covers the legs. Leave the turkey legs in the brine, covered, for up to 24 hours.
3. Preheat your smoker to 225°F. After your turkey legs are done brining, preheat your smoker. Use your favorite wood or pellets. I use a blend of maple, hickory, and cherry woods.

1. In a container add two cups of distilled water with kosher salt, Prague powder, and dark brown sugar. Stir till fully dissolved. Place two turkey legs into each 1 gallon Ziploc bag and then add one cup of marinating to each bag. Remove air from the bag by folding bad around turkey leg. Put both bags into a large just in case the bags leak and put into the refrigerator for 24 hours.
2. Remove turkey legs from bags and wash ALL of marinating off of turkey legs. This is very important due to getting all of the Prague powder off the skin. Using a paper towel pat dry the turkey legs. Spray the turkey legs with cooking oil so rub can stick to the skin. Apply rub so every inch is covered. I usually do this in a casserole dish so clean up is easy. Preheat grill or smoker to 325F.
3. Place turkey legs on the grill away from direct heat. That means using an indirect heat source like a smoke or on the grill away from the flame. Cook till turkey leg hit 175F internal temperature. Should take around an hour but always cook to temperature and not by time.
