1. Salt the eggplant slices lightly inside a mixing bowl. Heat 2 to 3 tablespoons of the olive oil in a large, heavy skillet over medium-high heat and lightly brown the eggplant slices on both sides, in batches, replenishing the olive oil if necessary. Drain on paper towels.
2. Preheat the oven to 350F/170C.
3. In the same frying pan, add the garlic and cook gently for a few minutes, just to soften. Add the tomato, cook it down a bit over medium heat, season with salt and pepper to taste, and add the honey and vinegar. Simmer gently until thick, about 15 to 20 minutes.
4. Place a few tablespoons of the sauce on the bottom of a medium sized baking dish and drizzle in a little olive oil. Place the eggplant slices on top, sprinkling with herbs and a little cheese, if desired. Spread a little sauce over the eggplant and continue layering in the same manner until everything is used up. Press down with a spatula and sprinkle a little vinegar on top. Bake for about 45 minutes, remove, sprinkle with chopped parsley and serve, with creamy polenta or feta, or both.

Add the tomatoes and stir to combine. Raise heat to medium-high and cook for about 10 to 15 minutes all together, until most of the liquid from the tomatoes cooks off. Stir in the raisins, petimezi and balsamic. Set aside to cool.
3. Cut the eggplant down the middle lengthwise, keeping the stems intact (they look pretty when baked).
4. Using a sharp paring knife, criss-cross and score the open, flesh side of each eggplant half, careful not to draw the knife completely down to the skin or to puncture the skin in any way. Lavishly brush the eggplant halves, skin and flesh, with extra virgin Greek olive oil.

2. Add the onions, reduce the heat to low, and cook, stirring, until the onions soften, about 8 minutes. Place the meat over the onions. Add the crushed tomatoes and bring to a boil. Add the wine. As soon as it steams up, add the bay leaves and cinnamon. Season with salt and pepper. Cover, bring to a boil, and reduce the heat to low. Simmer for 1 1/2 hours, until the meat is very tender.
3. While the meat cooks, preheat the broiler with a rack positioned 8 inches (20 c) from the heat. Brush the eggplants with olive oil, sprinkle with a little salt, and place in an oiled baking pan. Broil, turning once, until soft, about 8 - 10 minutes. Remove and drain on paper towels.

2. Put the octopus in a large pot with enough water to cover. Add the allspice and 3 of the bay leaves. Bring to a boil, reduce the heat, and simmer until the octopus is somewhat tender but still firm to the touch, for 40-50 minutes.
3. Remove from the heat, and remove the octopus from the pot. Reserve ½ cup of the cooking liquid and discard the rest. Cool the octopus slightly, and cut into 8 pieces along the tentacles. Set aside.

Add the mushrooms and garlic and meat and stir until the meat takes on some color, about 8 minutes. Add the tomatoes, spices, wine, salt, and pepper. Bring to a boil, reduce the heat to low, cover, and simmer until the sauce is thick, 1 1/2 to 2 hours. (You may need to add a little water to the sauce in the beginning, so that there is enough liquid to bring to a boil.) The sauce may be prepared 1 to 2 days ahead of time and refrigerated.
2. For the bechamel: Heat the butter in large saucepan over medium heat. When it melts and is bubbly, add the flour. Whisk until the flour begins to turn a light golden color. (Be careful it doesn't get too much color.) Pour in the milk and whisk until thick. This might take 15 to 20 minutes. Season with salt, pepper, and nutmeg. Remove from the heat and vigorously whisk the yolks into the hot bechamel. Add the cheeses and whisk until smooth. Set aside, covered with a kitchen towel to prevent a skin from forming on the top of the sauce. The sauce may be made several hours ahead, reheated, and thinned as needed.
3. For the vegetables: Preheat the oven to 350 degrees F.
4. Place the eggplants in one layer on an oiled sheet pan. Brush the top with olive oil. (It is best to use sheet pans with a perforated rack, to let the steam circulate around the vegetables as they bake.) Bake until soft, about 12 minutes. Remove. Repeat with the remaining eggplants slices until all are cooked to tender but al dente. They should not fall apart.
