1. Preheat oven to 350°. Lightly coat an 8x8" baking dish with nonstick spray, then line with 2 sheets of parchment, leaving overhang on all sides. Bring dates and 1 cup water to a boil in a small saucepan. Reduce heat and simmer until liquid is almost completely evaporated. Let cool.
2. Meanwhile, pulse whole wheat flour, oats, salt, baking powder, and 1 cup almonds in a food processor until almonds are very finely ground, about 1 minute. Add oil, butter, coconut sugar, and 2 Tbsp. agave and pulse to combine. Pulse in sweetened shredded coconut.
3. Transfer coconut-oat mixture to baking dish and pack evenly across bottom of dish, tamping and smoothing with the bottom of a dry measuring cup (the more compact it is, the better it will hold together when baked).
4. Pulse dates, lime zest, and lime juice in food processor, scraping down sides as needed, until smooth. Spread date purée evenly over coconut-oat mixture, leaving a ½" border around edges.

2. When the ingredients are well incorporated, remove the blade from the food processor.
3. Take 1 large tablespoon of the “dough” and roll it into a ball in between your hands.
4. Repeat with remaining dough.

Healthy No Bake Date Bar Recipe Super Healthy Kids

Because dates are so sweet, dates provide the perfect natural alternative to added sugars in any date recipe. In fact, dates are such a great source of natural sugar, they have been processed to make natural sweeteners such as date juice, date sugar, dehydrated dates, date paste, ground dates, and even diced dates that you can add to recipes

1. Toss everything into a food processor and process until the mixture starts to go smooth and clump into a ball. The dates will be all chopped up but you'll still have bits of nut.
2. Turn the mixture out into an 8 or 9 inch square dish lined with parchment paper. Use your hands to firmly press the mixture into the bottom of the dish. Cover and refrigerate for 30 minutes.
3. Remove the bars from the pan and cut into pieces using a sharp knife. Enjoy these bars cold or frozen. Store in an air-tight container in the fridge or freezer.
4. I think a high power blender could be used to make these, but I haven't tried it myself.
