2. Working quickly, dip a walnut into the melted chocolate with a fork and shake the excess off. Transfer to a piece of wax paper. Do the same with the pecan, then lay the pecan on top of the walnut. Repeat with the almond, finishing the cluster. Repeat with the remaining nuts.
3. Finish each with a pinch of sea salt, to do this you will want to sprinkle it on top once they are are almost dry so it doesn't absorb, but not too dry or it won't stick. Enjoy!!

1. Melt your chocolate in a fairly large heat proof bowl. This can be done in the microwave or over a double boiler. I opted for the double boiler method because I'm comfortable with it, but as long as the chocolate is melted, you're in good shape.
2. Dump the whole pound of roasted peanuts into the chocolate and stir well to ensure that all the nuts are completely covered.
3. Place the chocolate covered nuts in small mounds on either a silicone mat or nonstick foil lined baking sheet or sheets. (I used a Tablespoon, this took one and one-half sheet pans. Smaller clusters will likely require more space.)
4. Place in a cool dry place to set up. This does not necessarily have to be the refrigerator just somewhere clean and cool, but I find the fridge to be the best bet. Allow to harden completely.

1. Start by pouring all the chips into a microwaveable glass bowl and mix them up. Microwave for one minute. Then stir. For me, one minute is enough, but if they're still not melted enough to be smooth, microwave them for another 30 seconds to one minute until they're all yummy melted.
2. Then pour in 3 cups of salted peanuts and stir again until they're all well coated.
3. Line some large cookie sheets with parchment or wax paper (I prefer wax paper). Then dip out the candy by the spoonful onto your cookie sheets.
4. Let the candy sit at room temperature and harden (takes 30ish minutes, depending on the temperature and humidity in your house) or you can pop the sheets in the frig for 10 minutes and they're done!

1. Melt your chocolate and palm shortening. I use a microwave or the stove top. It is important when using a microwave not to burn your chocolate and cause it to seize. I heat for 1 minute and 30 seconds, and if necessary, additional 30 second increments. Notice the picture how there are still visible chunks of chocolate, but some visible melted chocolate as well. From here, you continue to stir it until smooth and fully melted.
2. Stir in your nuts and fruit of choice. There should be no additional chocolate pooling in the bottom of the bowl, add more nuts and fruit if necessary.
3. Drop spoonfuls of the mixture onto a wax paper or parchment lined cookie sheet. I use my beloved silicon baking sheets! Shape as necessary.

1. Dump the peanuts into the bottom of a small 2-3 quart slow cooker. If you don’t have a small slow cooker find an oven safe dish that will fit inside your large slow cooker and place the peanuts in that and then place the dish in the bottom of your large slow cooker.
2. Dump the chocolate chips into the slow cooker on top of the peanuts. Add in the shortening.
3. Cover the slow cooker and cook on LOW for 30 minutes to 1 hour (this time will depend on your slow cooker. Mine took exactly one hour. Yours may take 30 minutes or up to 90 minutes). Stir the chocolate, it should be all melted. Cover the peanuts totally with the chocolate.
4. Get out a piece of parchment paper or waxed paper. Spoon clusters of peanuts/chocolate onto the parchment paper. Let the chocolate dry and then enjoy. To speed up the drying process you can place the clusters into the fridge or freezer. Store leftovers in an airtight container.
