When it comes to French baking technique, entremets are the pinnacle of skill. Try one of these easy-to-follow recipes. A mirror glaze cake is a cake defined by its glossy coating called “mirror glaze” or a “glaçage miroir”.
The only part of an entremet cake that can’t be made ahead is the mousse. So, the day before the mirror glaze goes on, I make the mousse. This lemon mousse is light, fluffy, and incredibly lemony. It all starts with an Italian merengue. Then I folded in the lemon curd, and then the whipped cream.
To make this entremet you will need a 20 cm x 6cm cake ring, flower icing cutters, 1cm piping nozzle, sugar thermometer, food grade acetate cake strip 6cm wide. The royal icing flowers can be made by rolling out icing and using a flower shaped plunger cutter.
