Ingredients most commonly used in baking are: Flour is used to form the framework of the product and to provide gluten. The most common source of flour is wheat but other sources include potato, soya bean, barley, rye, rice, buckwheat and corn.
To make baking powder mix together 1 tablespoon of baking soda and 2 tablespoons of cream of tartar. Cream of tartar is an acid and it is used to activate the baking soda in recipes.
It is possible to use baking powder as a substitute for baking soda. For a straight substitution, use three times as much baking powder as baking soda. For instance, if a recipe calls for 1 teaspoon of baking soda, add 3 teaspoons of baking powder instead.
