(It will take 4-6 minutes, depending on the brand you use.)
3. Drain the lasagna noodles in a colander in the sink and carefully (they will be hot) hang them over the edges of your pasta pot to dry and cool. (You may need to have some hanging on the colander too.)
4. Prepare your meat mixture in a medium bowl, adding all the meat ingredients and gently mixing with your hands until combined. Wash your hands well and heat a tablespoon of olive oil in a large skillet. Add the meat mixture to the skillet and brown it over medium-high heat, stirring as needed, until there is no pink remaining. Drain any liquid in a fine-mesh strainer in the sink.

Cover; cook for 2 1/2 hours, stirring occasionally; remove lid; let simmer for 30 minutes. The ragu is done when the meat is very tender and the sauce has thickened. Adjust salt and pepper to taste; add sugar, if needed.
3. Cheese Sauce: Warm milk up in a saucepan to make sauce thicken faster.
4. In a large saucepan, melt butter over medium-low heat; add flour; mix constantly for 1 minute. Stir in about 1 c. of warm milk, until incorporated into the flour mixture. When mostly lump free, add remaining milk, using a whisk if needed to make it lump free.
