1. Boil the potatoes, skin on, until fork tender (approximately 20 to 30 minutes) in water. Drain and allow to cool so that they can be picked up, and held into a clean tea towel.TIP: I tested the theory of cutting along the middle of each potato, before boiling or steaming. It works! The peel slips off more evenly. Hold a potato in a tea towel and grip with one hand. Rub the peel off with the towel, and the other hand, and the peels should come right off!
2. Once all of the potatoes are peeled, cut each potato in half and then into fairly thin slices (about 1/4")into a large bowl.
3. Pour the vinegar, salt & pepper, to the warm potatoes and wait for a few minutes, so that it absorbs.
4. Cut the bacon into "lardons" (thin strips) and cook until crispy. Reserve about 2 Tbsp of the bacon fat.

1. Boil the potatoes in salted water for 15-20 minutes (depending on their size) until soft. Do not over boil. Let them cool down a bit and peel the skins. Slice in thick semi-circles or quarter-circles (again depending on the size of the potatoes). Place the slices in a deep bowl.
2. In a large sauce pan saute the onion in the vegetable oil until soft. Add the vinegar, the vegetable broth and the mustard and stir to combine. Bring to boil and immediately after that pour the hot marinade over the potatoes. Season with salt and pepper.
3. Stir gently, making sure that all slices are coated in marinate and let sit for at least 15-20 minutes. (The potatoes will acquire the landmark creamy coating of Kartoffelsalat and absorb the flavors of the hot marinade).
4. Serve the potato salad as is (taste first to determine if additional seasoning is needed) or fold in other ingredients to customize.

When the potatoes are tender enough to easily slide a fork into with a little resistance (you don't want to overcook the potatoes here or they will turn mushy in the salad), remove them from water and let them cool slightly.
2. While potatoes are cooking, heat a large nonstick frying pan over medium heat and fry the bacon until crisp. Remove the bacon from the pan and let it cool on paper towels. Once cool, crumble the bacon into small chunks. Set aside.

1. Boil potatoes whole and unpeeled for about 25 minutes, or until soft (they can easily be pierced with a fork or knife). Depending on the size of the potatoes, this could take a little more or less time. Drain and lay in a single layer on a flat surface to cool slightly.
2. When potatoes are cool enough to handle but still quite warm, gently peel the skin off with a thin knife (works best) or a potato peeler.
3. Slice potatoes into very thin discs and place directly into a medium sized bowl. Season with salt and pepper, stirring gently to coat the potatoes. Stir in onions and pour in vinegar and stir. Repeat with the oil. Taste and adjust seasonings as desired.

1. Scrub the potatoes and place in a large pot covered with an inch of cold water. Set over high heat and bring to a boil. Add 1 teaspoon salt and boil until tender, which will probably take anywhere from 12 to 20 minutes depending on the size of the potatoes. Drain the potatoes and allow to slightly cool.
2. Once the potatoes are just cool enough to handle, peel them using a small paring knife and cut them into 1/4-inch slices. Place the potato slices in a large bowl and pour the warm beef broth over the top. Top with the minced onion and white wine vinegar. Season with the remaining 1/2 teaspoon salt and freshly ground black pepper, to taste. Use a large spoon to gently stir until all of the potatoes are coated.
3. Cover the bowl with plastic wrap and allow to marinate at room temperature for 30 minutes. Stir in the vegetable oil and the parsley and serve immediately, using a slotted spoon if too much liquid remains at the bottom of the bowl. Alternatively, you may cover and refrigerate the potato salad overnight, then allow it to come to room temperature for 30 minutes before gently stirring and serving.
