1. I prefer to defrost Pollock slowly for the recipe. I simply take it out of the freezer a day before I am going to prepare the dish and leave in the fridge for a night. Before cutting fish, I get rid of all the fins. Then make a cut along the belly, scoop out the innards and thoroughly rinse the fish under cool running water. Finally, pet the fish dry with paper towels.
2. Cut fish into portions. Make sure to make them somewhat the same size, around 5 cm wide.
3. Mix flour with all the seasoning (salt, pepper, and herbs) to make a breading for frying fish.
4. Dip every piece of Pollock in the mixture. Make sure that every side is evenly cowered with flour breading.

2. Reduce heat to medium low, add salsa, tomatoes, chili powder, cumin, coriander, and salt. Simmer, uncovered, for 5 minutes or until slightly thickened. Add beans and corn, stir, and bring back to a simmer.
3. Add fish, pushing down slightly so it sits mostly in the sauce. Cover and simmer for about 10-15 minutes. Cooking time will depend on thickness of fish. For more reliability use an instant read thermometer to make sure it's at 145ºF in the thickness part of the filet. Also look for color inside changing from translucent to opaque. TIP: If the sauce needs to thicken slightly, remove fish, cover loosely with foil, and simmer sauce UNCOVERED 5 minutes or until it's reduced and thickened.
4. Squeeze lime juice over fish. Serve over rice. Top fish with tortilla chips, cheese, cilantro, sour cream, and additional lime wedges.

1. You can either follow the directions on the back of the Alaska pollock for cooking it or use the Instant Pot. Either way, your fish will be cooked within 15-20 minutes. For the Instant Pot, I placed (3) fillets in the Instant Pot, added a cup of water and two tablespoons of olive oil. I closed the lid of the place, made sure vent was closed and hit the meat option for 17 minutes.
2. After the timer went off on the Instant Pot, I vented it and waited for all of the steam to come out for the Instant Pot lid to unlock.
3. Once open, I checked to make sure the fish was done, it was- perfection. I added some seasonings (to taste) on the pollock and cut it into small strips. {Note: I didn't have to do a lot of cutting since the fish was practically falling apart}.
4. Now assemble your fish tacos. You can easily mix up the ingredients that go into fish tacos. Sometimes I will use refried beans, or I will switch it up with hummus. For this particular recipe, I am using refried beans, shredded white cabbage, pico de gallo, shredded cheese, chopped red peppers, onions, green onions, and cilantro.
